Stuffed Artichokes

Ingredients
  • 4-5 Artichokes
For the filling;
  • 1 Bunch of Green Onions
  • 1 Bunch of Dill
  • Half Bunch of Fresh Mint
  • 8-10 Sprigs of Parsley
  • 60 g Rice
  • 1 Orange
  • 2 Lemons
  • Half Green Apple
  • Salt
  • Black Pepper
  • Fresh Thyme
  • 100 g Olive Oil
  • 1 Bunch of Chard
Preparation
  • Squeeze the juice of the orange and lemons and set aside. Finely chop all remaining greens and the apple.
  • Wash the rice thoroughly and add it to the greens. Add the spices and olive oil to the squeezed orange and lemon juices, mix well.
  • Wash and chop the chard and spread it at the bottom of the tray where the stuffed artichokes will be placed. Stuff the artichokes and place them in the tray.
  • Drizzle some oil on top. Add a little lemon juice. Cover the tray with foil and first bring it to a boil on the stove, then transfer it to the oven. Bake at 200 degrees for 40 minutes.
  • Serve cold after taking out of the oven.
