Fringed Dumplings

How to Make
Fringed, Twisted, Chicken Dumplings – a dish that may change names from city to city, home to home, but always offers a uniquely delicious taste. One of my favorites, made by my dearly departed mother-in-law and something I’ve enjoyed from skilled hands each time I visit Çanakkale, is Fringed Dumplings. Here’s a brief recipe: mix 1 cup of boiled chickpeas, 1 whole village chicken (if you choose to boil the chicken, use onion, carrot, celery), 4 cups of flour, 1 egg, salt, and slightly less than 1 cup of water. On the side, boil the chicken with our vegetables. After letting the dough rest, divide it into two balls and roll them out. Wrap each around a rolling pin and cut into long strips, then bake the fringes in the oven until crispy. Once the chicken is cooked, shred it. Add its broth to the cooked dough, then incorporate the chicken and boiled chickpeas, and bake everything together for another 5 minutes. I added crushed red pepper fried in butter on top, but you can also serve it with yogurt if you like.
