We’re in my favorite times of the year, the warmth has touched the earth, and we’ve started to enjoy our vibrant green vegetables. Şiveydiz is a dish where fresh garlic shines bright. It’s from the Gaziantep cuisine, and though some might simply call it a soup, I believe it’s much more than that. To prepare Şiveydiz, start by sautéing 500 grams of diced lamb in olive oil. Season with salt and cook for 15 minutes, adding a little water if necessary. Then, add your fresh garlic, cut into two-finger thicknesses, and sauté them together. Incorporate a cup of boiled chickpeas and add meat broth. Make sure the garlic softens but does not mash. In a separate bowl, prepare a sauce by mixing 8 spoons of yogurt, 1 egg yolk, and 2 spoons of flour. Thicken the soup with this mixture while it’s boiling. Finally, garnish with mint fried in butter.
